1 cup non-dairy milk (vanilla-flavored) | Almond or oat milk works well
1 tbsp lemon juice | Creates buttermilk alternative
2 tbsp ground flaxseed | Combine with 6 tbsp water to form egg substitute
6 tbsp water | Mix with ground flaxseed to create an egg substitute
1 tsp baking soda | For leavening
1 tsp cinnamon | Adds warmth
½ tsp salt | Adds depth

Instructions

Preheat oven to 350°F (175°C). Grease 9-inch round cake pan thoroughly.
In a large bowl, sift together whole wheat flour, baking soda, and cinnamon. Add salt and mix thoroughly.
In a separate bowl, whisk melted coconut oil and maple syrup until homogenized.
Mix 2 tbsp ground flaxseed with 6 tbsp water and let rest for 5 minutes. Add to the wet ingredients along with vanilla extract. Stir vigorously with a balloon whisk.
Increase mixer speed to high and aerate the wet ingredients for 2 minutes.
Gradually fold the dry ingredients into the wet mixture using an offset spatula.
Pour the batter into the prepared pan. Smooth the surface with a bench scraper.
Bake for 35–40 minutes until a toothpick comes out clean. Let cool before serving.

Notes

For the flaxseed egg substitute, combine 2 tbsp ground flaxseed with 6 tbsp water and let gel for 5 minutes.
Replace coconut oil with another plant-based oil or dairy-free butter if preferred.
Use almond or oat milk for a richer flavor.
Grease the pan well to prevent sticking, especially with dense batter.
Store in an airtight container at room temperature for up to 2 days.
