Ingredients

Scale

1 package puff pastry (refrigerated)
8 ounces full-fat cream cheese, softened
1/4 cup powdered sugar
1 teaspoon pure vanilla extract
1 cup fresh strawberries, thinly sliced
1 large egg
1 teaspoon water

Instructions

Preheat your oven to 400 degrees Fahrenheit.
Line a large baking sheet with parchment paper.
In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
Whisk the egg with one teaspoon of water in a small bowl to create an egg wash.
Roll out the puff pastry and cut into eight equal squares.
Place a dollop of the cream cheese mixture into the center of each square.
Top the cream cheese with a few slices of fresh strawberries.
Brush the edges of the pastry with the egg wash.
Bake for 20 minutes or until the pastry is puffed and deep golden brown.
Remove from the oven and allow to cool slightly before serving.

Notes

Ensure the puff pastry remains chilled until the very last moment to achieve the best flaky lift. If the dough gets too warm, pop it back in the refrigerator for 10 minutes. Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat in a toaster oven for the best texture.
