These Spiced Molasses Cookies are dense, chewy baked goods that feature a harmonious blend of warm aromatics and rich molasses. Designed for the perfect soft texture, these cookies rely on a balance of brown sugar, fresh ginger, cinnamon, and cloves to create a deep, professional flavor profile that stays moist for days. They are the ideal treat for any occasion and represent the hallmark of traditional American home baking.

Ingredients

Scale

3/4 cup unsalted butter, softened
1 cup brown sugar, packed firmly
1/3 cup unsulphured molasses
1 large egg, room temperature
2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp fine sea salt

Instructions

Preheat your oven to 350 degrees Fahrenheit and line two large baking sheets with parchment paper.
In a large bowl, cream the softened butter and brown sugar until the mixture is light and fluffy.
Add the egg and molasses to the butter mixture, beating thoroughly to ensure full emulsification.
In a separate medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
Combine the wet and dry mixtures slowly, stirring just until no streaks of flour remain visible.
Scoop rounded tablespoons of dough and place them on the prepared baking sheets.
Bake for 10 minutes or until the edges are set and the tops have developed signature cracks.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure your molasses is unsulphured for the best flavor balance. To achieve the signature cracked tops, do not overmix the dough after adding the flour. Store in an airtight container at room temperature for up to five days to maintain softness.
