Ingredients

Scale

1/2 cup Unsalted Butter, softened to room temperature
3/4 cup Granulated Sugar
1 Large Egg, room temperature
1 tsp Vanilla Extract
1 1/2 cups All-Purpose Flour, sifted
1 tbsp Matcha Powder
1/2 tsp Baking Soda
1/4 tsp Fine sea salt

Instructions

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
Cream the softened butter and sugar together in a large mixing bowl using a hand mixer until the texture becomes light and fluffy.
Add the egg and vanilla extract to the mixture and beat at medium speed until fully incorporated.
Whisk the flour, matcha powder, baking soda, and salt together in a separate bowl to remove all lumps.
Combine the dry ingredients with the wet ingredients gradually using a silicone spatula until a uniform green dough forms.
Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them two inches apart to allow for spreading.
Bake the cookies for 10 minutes, watching carefully until the edges are just set but the centers remain soft.
Remove the sheet from the oven and allow the cookies to rest for five minutes before moving them to a wire cooling rack.

Notes

Ensure your matcha is high-grade culinary quality for the best color and flavor. Sift the matcha powder before mixing to ensure no clumps remain in your dough. Keep dough slightly chilled for a thicker cookie, and do not overbake as the soft center is what makes these cookies special.
