1 medium apple (Granny Smith or Honeycrisp), finely diced

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Whisk the flour, baking soda, ground cinnamon, and salt together in a medium bowl.
In a separate large bowl, cream the softened butter and brown sugar until smooth.
Beat the egg and vanilla extract into the butter mixture until pale and well combined.
Slowly fold the dry flour mixture into the wet ingredients until just combined.
Toss the diced apples with a teaspoon of flour, then gently fold them into the cookie dough.
Scoop rounded tablespoons of dough onto the prepared baking sheet.
