Perfect for a quick, guilt-free breakfast or a satisfying grab-and-go snack, these individual portions deliver the comfort of autumn in a perfectly balanced package that keeps your energy levels steady throughout the day.

Ingredients

Scale

1 large apple, finely diced
1/2 cup oat flour
1/4 cup plain Greek yogurt
1 tbsp pure maple syrup
1/2 tsp cinnamon
1 tbsp butter, melted
2 tbsp rolled oats

Instructions

Preheat your oven to 350 degrees Fahrenheit and grease a standard muffin tin with non-stick spray.
In a medium bowl, whisk together the oat flour, cinnamon, and melted butter until a crumbly mixture forms.
In a separate small bowl, combine the diced apples with maple syrup until evenly coated.
Fold the Greek yogurt into the oat flour mixture to create a thick dough.
Press a portion of the dough into the bottom and up the sides of four muffin cups to create shells.
Spoon the maple-cinnamon apple mixture evenly into each of the four shells.
Sprinkle the rolled oats over the top of the apples for added texture.
Bake for 20 minutes until the edges are golden brown and apples are tender.

Notes

Use a tart apple variety like Granny Smith for the best flavor contrast. Store leftovers in an airtight container in the refrigerator for up to 3 days. Use gluten-free rolled oats and oat flour if you have a gluten sensitivity.
