Ingredients

Scale

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 cup granulated white sugar
2 large eggs, room temperature
1/2 cup whole milk
1/3 cup butter, melted and cooled
2 tbsp poppy seeds
1 tbsp lemon zest
2 tbsp fresh lemon juice

Instructions

Preheat your oven to 375 degrees Fahrenheit.
Line a muffin tin with paper liners or grease each cup thoroughly.
In a large bowl, whisk together the flour and baking powder.
In a separate bowl, whisk the eggs and sugar until well combined.
Slowly stir in the milk, melted butter, lemon zest, and lemon juice into the egg mixture.
Gradually fold the dry ingredients into the wet mixture, being careful not to overwork the batter.
Gently stir in the poppy seeds.
Divide the batter evenly among the 12 muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Ensure all ingredients are at room temperature to help with emulsification. Do not overmix the batter to keep the muffins light and cake-like. Store in an airtight container for up to 3 days.
