Ingredients

Scale

1.5 cups all-purpose flour
1 cup blueberries (fresh or frozen)
1 cup granulated sugar
2 large eggs (room temperature)
0.5 cup unsalted butter (softened)
0.5 cup whole milk
2 tbsp lemon juice (freshly squeezed)
1 tbsp lemon zest
1.5 tsp baking powder
0.25 tsp fine sea salt

Instructions

Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan thoroughly.
Cream the softened butter and granulated sugar in a large bowl until the mixture appears light and fluffy.
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
Whisk together the flour, baking powder, and salt in a separate container to remove any clumps.
Combine the milk, lemon juice, and lemon zest in a small measuring cup for easy pouring.
Alternate adding the flour mixture and the milk mixture to the butter base, starting and ending with the flour.
Fold the blueberries gently into the thick batter using a silicone spatula to avoid crushing them.
Pour the batter into the prepared loaf pan and smooth the top with your spatula.
Bake for 55 minutes or until a toothpick inserted into the center comes out clean.

Notes

Ensure all dairy and egg ingredients are at room temperature to achieve the best emulsion when creaming the butter. Toss blueberries in a tablespoon of flour before folding them into the batter to prevent them from sinking to the bottom of the pan while baking.
