4 ripe peaches, halved and pitted
1/2 cup mascarpone cheese, room temperature
4 tablespoons high-quality honey
1 tablespoon neutral oil or melted butter
3 tablespoons heavy cream
1/2 teaspoon vanilla extract

Instructions

Clean the peaches thoroughly under cool running water.
Slice the peaches in half along the natural seam and twist to separate, then carefully remove the pits.
Brush the cut surfaces of each peach half lightly with the oil or butter.
In a small bowl, whisk together the mascarpone, heavy cream, and vanilla extract until smooth.
Preheat your outdoor grill or a heavy-duty cast iron grill pan to medium-high heat.
Place the peach halves cut-side down onto the hot grates.
Grill for 4 to 6 minutes without moving them to ensure deep char development.
Remove the peaches once soft and serve warm, topped with a dollop of the mascarpone mixture and a drizzle of honey.

Notes

Ensure you use freestone peaches to make removing the pits much easier. If you prefer a lighter cream, you can increase the amount of heavy cream by a tablespoon. Serve immediately while the fruit is still warm for the best contrast.
