Ingredients

Scale

2 1/2 cups all-purpose flour
2 1/4 tsp instant yeast
1/2 cup warm milk (110°F)
1/4 cup granulated sugar
1/4 cup cottage cheese (small-curd or pureed)
1 large egg, room temperature
3 tbsp butter, softened
1/2 tsp fine sea salt
1/3 cup brown sugar, packed
1 tsp ground cinnamon

Instructions

Combine warm milk and instant yeast in a large bowl and let sit for 5 minutes until foamy.
Mix in the cottage cheese, egg, sugar, and 2 tablespoons of softened butter until well incorporated.
Gradually fold in the flour and salt until a dough forms.
Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes.
Let the dough rise in a warm, greased bowl for 60 minutes or until doubled in size.
Roll the dough into a rectangle and spread the remaining 1 tablespoon of butter over the surface.
Sprinkle evenly with a mixture of brown sugar and cinnamon.
Roll into a log, cut into 8 even slices, and place in a greased baking pan.
Cover and let rest for 20 minutes.
Bake at 375°F for 25 minutes or until golden brown.

Notes

Ensure your cottage cheese is blended if you prefer a perfectly uniform dough texture. Serve warm, topped with a simple powdered sugar glaze if desired. Store leftovers in an airtight container for up to 3 days.
