Indulge in the perfect fusion of a warm bakery cinnamon roll and the convenience of a gourmet cake pop. These delightful treats feature moist vanilla cake blended with creamy frosting, aromatic cinnamon, and sweet brown sugar. Each pop is hand-rolled and dipped in a silky white chocolate shell, creating a nostalgic flavor profile that is absolutely perfect for holiday celebrations, dessert tables, or as a decadent handheld snack for any occasion.

Ingredients

Scale

1 baked 9×13 pan vanilla cake, cooled
1 cup cream cheese frosting
2 teaspoons ground cinnamon
1/4 cup light brown sugar, packed
2 cups white chocolate melting wafers
24 6-inch lollipop sticks

Instructions

Crumble the cooled vanilla cake into a large mixing bowl until it reaches a fine, sandy consistency.
Add the cream cheese frosting, ground cinnamon, and brown sugar to the cake crumbs.
Mix the ingredients by hand until the dough holds together when squeezed.
Scoop one tablespoon of the mixture and roll it into a firm ball using your palms.
Place the shaped balls onto a parchment-lined baking sheet.
Chill the balls in the refrigerator for 30 minutes to ensure they set properly.
Melt the white chocolate in a double boiler until smooth and free of lumps.
Dip the tip of each lollipop stick into the chocolate, then insert it into a cake ball.
Dip the entire cake ball into the melted chocolate, tap off the excess, and let set.

Notes

Use a slightly firm cake base to ensure the pops hold their shape on the sticks. Ensure the cake is completely cool before crumbling to prevent the frosting from melting. Store in a cool place; the white chocolate shell keeps the pops fresh for several days.
