8 oz Dark Chocolate (60-70% cacao), finely chopped
1/2 cup Heavy Cream (at least 36% fat)
1.5 tsp Chai Spice Blend (ginger, cardamom, cinnamon)
1 tsp Pure Vanilla Extract
1/4 cup Unsweetened Dutch-processed Cocoa Powder

Instructions

Combine heavy cream and chai spices in a saucepan over medium-low heat.
Heat until it begins to simmer, then remove from heat and steep for 10 minutes.
Pour the infused cream through a fine-mesh sieve over the chopped chocolate.
Whisk slowly until the chocolate is fully melted and the mixture is smooth.
Stir in the vanilla extract.
Refrigerate the ganache for at least 3 hours or until firm.
Scoop small portions of the ganache and roll them into balls using your hands.
Roll each truffle in the cocoa powder until evenly coated.

Notes

Ensure the cream is not boiled to prevent scorching. Use high-quality dark chocolate for the best texture. If the ganache is too soft to roll, refrigerate it for an additional 30 minutes.
