Ingredients

Scale

1 cup unsalted butter, softened to room temperature
1 1/4 cups dark brown sugar, packed
1 large egg, room temperature
2 tsp pure vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp fine sea salt
Flaky sea salt (Maldon or similar), for finishing

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and packed brown sugar until the mixture is pale and fluffy.
Beat in the large egg and pure vanilla extract until the mixture is smooth.
In a separate medium bowl, whisk together the flour, baking soda, and fine sea salt.
Gradually add the dry ingredients to the butter mixture, mixing until just combined with only a few streaks of flour remaining.
Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between them.
Bake for 12 minutes until the edges are golden brown but the centers remain soft.
Remove from the oven and immediately sprinkle with a pinch of flaky sea salt while the cookies are still warm.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure your butter is truly at room temperature to achieve the best creaming texture. For best results, measure flour by spooning it into the measuring cup rather than scooping directly from the bag. Store in an airtight container for up to 5 days to maintain the chewy texture.
