Ingredients

Scale

1 cup unsalted butter, softened
1 cup brown sugar, packed
1 large egg, room temperature
1 tsp pure vanilla extract
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp fine sea salt
4 oz cream cheese, softened
1/2 cup powdered sugar

Instructions

Preheat oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
Bake for 12 minutes or until the edges are just set.
Allow cookies to cool completely on a wire rack.
While cookies cool, beat the softened cream cheese and powdered sugar until smooth.
Spread the cream cheese filling on the bottom of half the cookies and top with the remaining halves to form sandwiches.

Notes

Ensure butter and cream cheese are at true room temperature for the best texture. If the dough feels too soft to scoop, chill it for 15 minutes before baking. Store finished sandwiches in the refrigerator for optimal freshness.
